Each version starts from a RecipeFix original, then changes the ingredients and the dependent cooking steps together. These are full recipes, not swap lists.
The original Chicken Parmesan depends on wheat flour and panko for a dry, crisp shell. This version rebuilds that coating with a 1:1 gluten-free flour blend and gluten-free panko, while keeping the same wire-rack finish so the crust does not steam under the sauce.
A cup-for-cup flour swap is not the whole conversion. Gluten-free pancake batter needs time to hydrate, and it often looks thicker before it cooks. This version builds that rest into the method and uses doneness cues instead of thinning the batter until it behaves like wheat batter.
The two structural jobs in the original loaf are the eggs and butter. Ground flax plus water replaces binding, while neutral oil keeps the crumb moist without dairy. The method gives the flax time to gel before mixing so the loaf does not rely on an unhydrated seed mixture to hold together.
Banana bread is forgiving enough for a direct gluten-free flour conversion, but the batter still benefits from extra hydration time. This version uses a 1:1 blend with xanthan gum and rests the finished batter before baking instead of sending dry starches straight into the oven.
Egg contributes soft curds and a little protein to the original fried rice. This version uses crumbled extra-firm tofu, cooked separately until its surface dries before the vegetables and rice go in. That keeps the pan hot enough to fry the rice instead of steaming it.
Rice itself is gluten-free; the usual problem is the sauce. Standard soy sauce commonly contains wheat, so this version switches to tamari labeled gluten-free and keeps the rest of the high-heat fried-rice method intact.
The original uses dairy twice: yogurt in the marinade and butter plus heavy cream in the sauce. This version replaces each according to its job rather than using one substitute everywhere: unsweetened dairy-free yogurt still clings to the chicken, neutral oil blooms the spices, and full-fat coconut milk rounds out the tomato sauce.
